This time of the year, these Bluefin tuna are migrating through the Pacific near Baja, Mexico. In the trade, tuna are graded by quality with a number scale. These younger tuna, known in the industry as “Baby Blues,” are graded number 1 + + +

The flesh from these tuna is Chianti red with just a hint of blue. Ideal for sushi or sashimi styled presentations, the quality of this tuna will make even your favorite sushi chef drool.
